We all know the best part of being in Thailand: the street food. But for many English speakers, standing in front of a busy cart with woks sizzling and steam rising can be a little intimidating. You want that delicious Pad Thai, but what if you get the spice level wrong?

Don’t worry! You don’t need to be fluent to eat well here. Here are three essentials for your next street food adventure:

  1. The Greeting: Always start with “Sawatdee ka/krap.” A smile goes a long way!
  2. The Spice Level: This is the most important one!
    • Mai Ped (ไม่เผ็ด) = Not spicy.
    • Ped Nit Noi (เผ็ดนิดหน่อย) = A little bit spicy.
  3. The Politeness Particle: Adding Ka (for women) or Krap (for men) at the end of your order turns a request into a conversation. It’s the magic ingredient that makes everyone smile back at you.

Next time you see a stall, walk up with confidence. Even if you only say “Pad Thai, Mai Ped, Ka!”—you’re doing great.
